We spent lots of time & energy perfecting our Margherita pizza. By going back and researching the origination of the pizza we learned there are really just a few ingredients in a true, classic Margherita pizza: tomatoes, basil, fresh mozzarella, garlic, and olive oil.
The origins of the pizza date back to 1889 when Queen Margherita chose it as her favorite because it was swathed in the colors of the Italian flag: red tomatoes, green basil, and white mozzarella.
The base is a crispy thin crust. For our sauce we start a California tomato that is FRESH packed within 24 hours of being picked off the vine with basil, garlic, onion, and spices. We add some more garlic to give it a kick! Over the sauce we spread the FRESH mozzarella. This is where the pizza really shines. After much deliberation we chose to use Grande FRESH mozzarella, the Cadillac of cheeses. After one taste, we could tell the difference and so will you. On top of the cheese come the slices of Roma tomatoes. After baking the pizza we drizzle it with Extra Virgin Olive Oil and garnish with FRESH basil leaves.
